The Reuben is a warm, melty sandwich made with corned beef, rye bread, sauerkraut, Russian dressing, and Swiss cheese. One popular origin story claims it was created in 1914 at Manhattan’s Reuben Delicatessen, where owner Arnold Reuben put it together for an out-of-work actress who wanted something new.
Although the mix of meat and cheese isn’t kosher, the sandwich is still common in Jewish delis, as it’s part of Jewish American food culture and largely enjoyed by those who aren’t strictly observant. Like many iconic dishes, the Reuben has inspired countless variations, including the Rachel, the grouper Reuben, the West Coast Reuben, the Montreal Reuben, and even Reuben egg rolls.
Savory, messy, and deeply satisfying, the Reuben remains a beloved staple of New York cuisine.
