Country Of Origin: Ukraine 🇺🇦

This unusual snack is often considered one of the main symbols of Ukraine. It is made of fatback slabs, salted with spices. While usually the skin is retained, many Ukrainians prefer to eat salo without the skin. The slabs are rubbed with salt and spices, such as black pepper, garlic, dried dill, bay leaf, marjoram, cardamom, and cumin. The meat is then placed in a Tupperware sprinkled with spices and put in a fridge for 3-4 days. Salo is traditionally served with rye bread, borscht, and Ukrainian alcoholic drink horilka.

History: The history of how the salo recipe became a popular dish in Ukraine is rather scary. It’s assumed that salo’s creation happened when the eastern Slavic tribes were conquered by the steppe nomads from Asia. The conquerors would often take all of the local people’s cattle, horses, goats, and even sheep, leaving short-legged pigs behind because they were less mobile. This left the local Slavic tribes with only one choice; to prepare and preserve enough pork to survive the winter.

Fun Fact: Salo can also be a dessert. Pig fat chocolate may sounds like a fast food expose but chocolate covered salo is food trend, sometimes referred to as "Ukranian Snickers".

We realize Salo can be hard to find so check out this link if you're looking to buy some authentic Ukrainian Salo: Traditional Ukrainian Style Salo or Imported Pork Belly Salo.
