Moqueca is a Brazilian seafood stew that is typically made with shrimp or fish in a base of tomatoes, onions, garlic, lime, coriander, palm oil and coconut milk.
Moqueca can be traced back to around 300 years ago, when it was first invented due to the fact that the Portuguese brought coconuts to the country, and slaves from Africa introduced palm oil to Brazilian cuisine. There are numerous versions of moqueca, such as moqueca Capixaba, or moqueca Baiana, from the Bahia state in the northeast of the country.

History: Moqueca's history is a rich cultural fusion, with roots in the Indigenous Tupi word for slow-cooking over fire and further developed by African and Portuguese influences in Brazil's coastal regions. It evolved into two main regional styles: the vibrant, palm oil-and-coconut-milk-infused Moqueca Baiana from Bahia, and the lighter, tomato-based Moqueca Capixaba from Espírito Santo.
