The Chinese mitten crab (Eriocheir sinensis) is native to the Yangtze River Delta, where it migrates from freshwater lakes (like Yangcheng Lake) to the East China Sea to spawn. This natural lifecycle made the crab a seasonal local ingredient for centuries.
