Stamppot, literally meaning “mashed pot,” is a classic Dutch comfort food made by mashing potatoes with one or more vegetables such as kale, spinach, endive, turnip, or sauerkraut. When carrots and onions are added to the mix, the dish takes on a special name—hutspot.


While stamppot can be paired with bacon, it is most often served alongside smoked sausage or a cut of cooked meat, making it a hearty, filling meal. Among the many variations, the most beloved is stamppot boerenkool, which combines potatoes with kale.

This dish is especially popular in the colder months. It’s a staple at restaurants and street fairs across the Netherlands, offering warmth and comfort on grey, chilly winter days. The kale version is particularly well-suited to winter, as frost enhances the tenderness and flavor of the leaves.
